TGIF! Is it just us or is the big game approaching on Sunday afternoon not as exciting this year? Maybe it’s because we’ve seen the Patriots go to the Super Bowl so many times that it kind of feels like Groundhog Day? Whatever the reason, I think it’s safe to say that the main reason we’re looking forward to waking up on Sunday are the snacks.
We’re not going to a big party this year, but you better believe we’ll be drinking beer (or Boochcraft – aka the best invention of all time…more on that in a future blog) and snacking ALL day. We haven’t planned out our menu, so to speak, quite yet, but we’ve rounded up our favorite vegetarian appetizers that would be perfect for the big game below to help us decide. 1. Mediterranean Nachos

We’ll admit that this is the only recipe on here that we’ve actually made & tried ourselves, but that doesn’t mean it is any less exciting. We love nachos & we love Mediterranean food, so of course we’d LOVE Mediterranean-inspired nachos complete with melted cheddar cheese, flavorful feta, red onions, Kalamata olives, roasted tomatoes, and cilantro atop pita chips (instead of tortilla chips).
We’ve started adding a hybrid of avocado cilantro creme & cilantro jalapeño sauce on top & we’re thinking about adding pepperoncinis next time. Yum.
2. Crispy Smashed Potatoes with Avocado Garlic Aioli

B used to be obsessed with baked potatoes & we both love potato skins, but these crispy, oven-baked smashed potatoes take it to the next level. Maybe it’s the classy garnish & drool-worthy sauce?
3. Fried Mac n’ Cheese Balls

We love the fried macaroni & cheese from Trader Joe’s, but let’s admit it – everything is better homemade. For those who like their food spicy (like us!), consider adding habanero or buffalo sauce in the mac n’ cheese mixture for an added kick. P.S. What would you guys dip these in?!
4. Vegan Hot Wings

We’ll admit, we’ve never thought twice about making our own “chicken” wings until we saw this recipe. It actually doesn’t look as hard as you would think. K is a big fan of the Gardein wings from Yard House, so we’re excited to try these out & have a blind taste test!
5. Chipotle Lime Fries

French fries are a game day staple and we’re already obsessed with this adult version topped with spicy sauce, fresh squeezed lime & cilantro. Fries are one of K’s top three favorite foods, so you better believe we’ll be trying out this recipe for the big game or very soon.
